Sweet Corn Kernels - removed from the cobs - Giant, Richfood - 1 pack
Fresh Grated coconut - 3 tbsp.
Halapeno peppers - 1 or 2 finely chopped
Cliantro - few leaves, chopped fine
Lime juice - 2 tsp.
Salt to taste
- Heat up 2 tsps of oil in a wok. Add 1 tsp of mustard (optional). After it splutters, add green chillies and fry them.
- Add the corn and stir well on high. Let the water dry up. ( frozen kernels have some amount of water on them.)
- Add coconut and lime juice and mix well.
- Garnish with cliantro and serve.
